A Chesapeake Bay Seafood Calendar: What's in Season When

One of the best things about the Chesapeake is that the menu changes with the calendar. Crabs, soft-shells, oysters, and rockfish each have their moment, and eating in season is when Bay seafood truly shines. Here's a simple month-by-month guide so you can time your Hooper's Island trip around exactly what you're craving.

The playset in the backyard at The Bayside Escape

Blue crabs: spring through fall

The headliner. Maryland's blue-crab season runs April 1 through December 15, with the peak from July through September, when the crabs are biggest, heaviest, and most plentiful. If a steamed-crab feast on the deck is the dream, aim for mid- to late summer — though good crabs are available across most of the warm season.

Soft-shell crabs: late spring into summer

Soft-shells are blue crabs caught in the brief window just after they molt their hard shells. The season runs roughly late April through September, peaking in May and June, when warming water triggers heavy molting. Lightly fried and eaten whole, a soft-shell is one of the great seasonal treats of the Bay — and spring is the time for it.

Oysters: fall and winter

The old rule of thumb is to eat oysters in the months with an "R" — roughly September through April — and there's real wisdom in it: the cooler months are the traditional season, when wild Chesapeake oysters are at their best. Maryland's wild harvest runs in fall and winter (exact dates are set each year, so check current DNR regulations). A raw bar or an oyster roast is a perfect cold-weather counterpoint to summer's crabs.

Rockfish (striped bass): spring and fall

The Chesapeake's signature gamefish has carefully managed seasons that shift year to year. In broad strokes: there are spring and fall harvest windows, summer targeting restrictions during the hottest months, and catch-and-release periods in the cold season. Because the dates and rules change annually, always confirm the current Maryland DNR striped bass regulations before you plan to fish or keep.

And the supporting cast

Summer brings easy, fun panfishing for white perch, spot, and croaker right off local piers and shorelines — perfect for kids and a fresh, simple dinner. Clams and other shellfish round out the Bay's bounty through the warm months. Whatever the season, there's almost always something good coming out of the water nearby.

Quick season cheat-sheet

  • Spring: soft-shell crabs arrive; spring rockfish; hard crabs ramping up.
  • Summer: peak hard crabs (Jul–Sep); easy panfishing; soft-shells early on.
  • Fall: crabs strong through mid-December; oysters return; fall rockfish run.
  • Winter: oysters at their best; rockfish catch-and-release; cozy raw bars.

Seasons and regulations can change year to year — always confirm current Maryland DNR dates and any licenses before fishing or crabbing.
